A Roman port under the suburbs of Tunis, an amphitheatre standing in a farming town, a sea of sand four hours south. Most itineraries are four or five of these, in some order.

The dunes start about six hours from the coast, which is why the desert is almost never a day trip. These three are the shapes it comes in: out and back in two days, a camel trek with a night on the sand, or a private 4x4 that stops where you ask it to.
Two days, one night on the sand
Leave the coast after breakfast, cross the Chott el Jerid salt pan at the flat hour, sleep at a camp outside Douz and drive back through the oases.

A guide, a string of camels and the Grand Erg Oriental. You walk as much as you ride, you eat what is cooked on the fire, and the silence at night is the point.
Private 4x4 to Ksar Ghilane
The hot spring in the middle of nowhere, reached on a piste no coach will take. Private means you stop for the Roman fort and the well, not just the photo point.
Tunis is a medina, a mosaic museum and a Roman port, ten minutes apart.
The capital packs the country's three biggest sights into one metro line. Most people do them in a single day and regret rushing the Bardo. Give it two.
Three things Tunisia has that the rest of the Mediterranean does not.
Roman ruins and warm water are everywhere on this sea. Underground houses, a film set left standing in the sand and the biggest amphitheatre outside Rome are not.
The Film Sets
Mos Espa was built on the salt flats near Nefta in 1997 and simply left there. The domes are sanding over a little more every year, and the local guides who take you out are the reason they are still upright at all. The other half of the trip is Matmata, where the underground courtyard houses were homes long before a film crew borrowed one.

The Ksour
South of Tataouine the hills carry ksour: fortified granaries built as stacked barrel vaults, each cell belonging to one family. Ksar Ouled Soltane still has four storeys of them around two courtyards. Chenini and Douiret are the cliff villages nearby, half-abandoned, with a white mosque on the ridge above.

El Jem
A town of 20,000 people has a Roman amphitheatre that seated 35,000. Thysdrus grew rich on olive oil and built accordingly. You can walk the arena floor and go down into the holding corridors underneath, which is more than Rome allows, and on most mornings you will do it with almost nobody else there.

Two ninth-century fortress-monasteries, forty minutes apart, built to watch for ships that were not friendly. Climb the tower at Sousse for the medina roofs and the port, then take Monastir for the arcades and the harbour. Both are usually paired with El Jem, which is inland from either.

Most of Tunisia can be booked the night before from reception. These cannot. They run on long drives, fixed departure days and vehicles that are already spoken for in the high season.

From June to September the middle of the day is not sightseeing weather. The answers are indoors and they are good ones: the Bardo's mosaic halls, a covered souk, a shaded courtyard house in the medina, a long lunch. None of it depends on the forecast.
